The Dairy Queen is a revolving-urn butter churn, and currently, the only small-scale option available which can churn, extract buttermilk, knead, wash and salt the butter all in the same vessel. The efficiency of the unit means that up to 7kg butter per hour can be produced, and with the butter block extruder, a continuous block of butter can be extruded and cut into correct lengths/weights for wrapping in butter paper or placing in tubs with lids.

  • The Dairy Queen is a jacketed tank and with various attachments, it also becomes a batch pasteuriser to process 70liters of milk per batch into yoghurt or cheese. The Dairy Queen thus becomes a multi-purpose production unit, ideal to test local markets with artisanal butter, cultured milk, yoghurts and cheeses. Some added benefits are;
  • The unit can be used to cool raw milk down, with ice water circulating in its jacket.

  • With the addition of a circulating homogenising pump, cream separation from the milk can be reduced after pasteurisation 
  • Filling units for pasteurised milk, milk and yoghurt/maas culture mix stirred/drinking yoghurt can be attached to allow packing directly from the unit itself.
  • The homogenising pump also helps to improve the quality of yoghurt, and tubs can be filled directly from the tank with yoghurt once produced.
  • When making cheese, a rotary curd cutter and overhead clip-on cheese press can be attached to assist with whey separation.

 

In short, this modular, expandable unit allows for low start-up capital with room for expansion into a multi-product small scale dairy production facility.

We also convert 500lt chest freezers to supply ice water for rapid chilling purposes. Equipped with a stainless steel lining, the chest freezers become inexpensive ice water dams with a stainless steel lid for an added work surface area.
